l. For full-service type facilities in the field, obtaining safe food can be a serious
problem. In areas where human waste is used as a fertilizer or where gastrointestinal
or parasitic diseases exist, the medical authority must authorize the use of raw fruits
and vegetables. Even when approved, these items must be disinfected by:
(1) Immersing the items in 160 F water for 1 minute.
(2) Immersing the items in a special food service disinfectant for 30 minutes.
(3) Immersing the items in a 250 ppm chlorine solution for 30 minutes.
