1-19. HIGH TEMPERATURE, SHORT TIME (HTST) PASTEURIZER
The high-temperature, short-time pasteurizer is used to a far greater extent than
the vat pasteurizer. The main difference is that progressively higher temperatures and
shorter times are used. The HTST system is a "continuous" process whereas vat
pasteurization is a "batch" process. See figures 1-2 and 1-3. The steps in this method
