3-18. LEGS
Legs include the whole leg, that is, the thigh and the drumstick, whether jointed or
disjointed. Back skin is not included. Pelvis meat may be attached to the thigh but will
not include the pelvis bone (figure 3-6).

3-19. DRUMSTICKS
Drumsticks are separated from the thigh by a cut through the knee joint
(femorotibial and patellar joint) and from the hock joint (tarsal joint) (figure 3-7).

3-20. THIGHS
Thighs (figure 3-7) are disjointed at the hip joint and may include the pelvic meat
but will not include the pelvic bones. Back skin is not included.
