INTRODUCTION
Lesson 6 deals with the inspection of dry storage areas. It is important that dry
foods be kept in a safe condition while being stored. Dry foods that have become
contaminated are a direct health threat. In addition, dry foods that are not fit to serve
due to improper storage can result in significant financial loss.

a. The chart on pages 6-3 through 6-18 lists the important items to check when
inspecting the dry storage area.
b. Remember that common sense is important when you inspect the dry storage
area. Several minor deficiencies do not mean that the entire area is unsatisfactory. On
the other hand, a direct health threat--such as leaking sewer or drain pipes--is serious
enough to make the area hazardous even though other operations are satisfactory.
c. Answer the questions with the chart as you read.
